$12 - Semillon 2002This lighly oaked refreshing wine exposes the fruit well. It will further develop, with the exhibited nutty and honey flavours and aromas being promoted. Wine colour will richen and compliment the enhanced characteristics.

$14 - Semillon/Chardonnay 2004 This classic medium dry white blend of Semillon and  Chardonnay has a great mouthfeel, with our region’s Semillon ‘honey’ evident on the nose and palate. Its easy drinking style compliments many traditional and new Queensland foods.

WHITE & RED WINES – SEMI/SWEET

$14 - Somerset White 2007 – This semi sweet wine has been crafted from Semillon grapes. Serve chilled on any occasion either with food or stand alone. Absolutely superb with soft cheeses, curries and Asian cuisine, especially Thai. Starts sweet with a wonderfully refreshing lemon/limey citrus finish.

$14 - Somerset Red 2006 – This semi sweet has been created from the smoothness and soft tannins of the Merlot grape. It is the perfect accompaniment to the Queensland lifestyle – a classy veranda or BBQ wine – one that’s equally at home with pizza or pasta. Sweet, yet a faint hint of spice.

$15 - Somerset Sunrise – This ‘blush wine is a blend of Semillon, Chardonnay and a touch of Merlot for the sunrise effect. The wine is that of a lunchtime semi-sweet Rose’. Enjoy with seafood and lighter lunches. This superb semi-sweet appeals to a wide range of palates.

$16 - Somerset Deja’ Blue – A blue wine? Yes a blue wine! This sweet Chardonnay is tinted blue to provide a touch of tropical Queensland to its refreshing taste. In Queensland, we have blue skies, blue water and now a blue wine. Enjoy this wine with a cheese/tropical fruit and nuts platter. Serve icy cold.

Try "BLUE MAX". Take a long glass of crushed ice and add equal parts of Deja Blue and lemonade. Perfect fot that hot Queensland day, by the pool or wherever you are having fun.

$12 - Summer Shiraz 2002 This easy drinking light red has a berry nose and pleasant tannin finish. Chill for that midday dry wine experience. Its summer style reflects a satisfying mouthfeel.

$13 - Cabernet Franc 2002 - This light, Southern European style wine is rich in colour and aromatic to the nose. Cab Franc compliments the lighter meats such as pork, veal or lamb.

$14 -  Merlot (Bin 35) 2004This wine has generous fruit on the nose and palate, combined with dominant natural tannins, to ensure that the wine will age with character and style. Our region’s Merlot grapes produce regionally distinctive tannins and we present a big gutsy Merlot that has great roundness of character. Drink now or enjoy cellaring for four to five years.

$15 - Cabernet Sauvignon/ Franc 2007 This blend of Cabernet Sauvignon and Cabernet Franc provides a perfect partnership of taste and finesse. The ageing in French oak has imparted a rounded softness with a generous berry nose. The wine is most generous and intriguing on the palate and will continue to develop enhanced characteristics should it be cellared.

$16 - Rebel Shiraz 2005 This white Shiraz has all the qualities of a superb Rose’ – it is still, tart and full of strawberries on the nose and palate and has an exquisite slight tannin finish. Sales of this wine will assist Athens’ Olympian Ms Rebel Morrow and her horse Oaklea Groover in their quest for Gold  at Beijing 2008.

FORTIFIEDS

$20 - Neurum Merlot Vintage 2005This vintage fortified has been made with predominantly Merlot grapes making it smooth and fruit driven. The finish lingers sweet unlike traditional vintages. This wine will delight many palates with its classy ambiance and easy drinking style.

$20 - Doyles Shiraz Vintage 2005  – A little drier than the Neurum, this fortified has been boosted with the addition of brandy spirit making it a little drier. It is smooth and silky on the palate.

$20 - Archer Mist Liqueur Merlot 2005 This ‘yummy’ light liqueur styled fortified is comfortably at home in a small port glass, as it is in a long glass with crushed ice and soda or lemonade. Lavishly dribble it over ice cream, crepes or pour a dash into a dry champagne. Its sweet nature and pleasant length on the palate make this liqueur a lifestyle must.

$22 - Archer Dew - White Port 2008 - This white port has been made from Semillon grapes grown at our Estate. You will enjoy its warm semi sweet unique honeyish flavour.

SOME POINTS TO PONDER WHEN TASTING/DRINKING WINE


1. Winetasting is more exacting when the wine is relatively warm. Consider the following:

  • Put an apple in the fridge and one on the fridge. Come back in an hour. The apple that refreshes the most is the cold apple, but the one which has the most taste/flavour is the one that was sitting on the fridge.
  • Once we put cold wine into our mouth, our mouth automatically warms up the wine and this enables the release and greater intensity and propensity of flavours.
  • When you are putting your nightly ’Chardonnay’ in the fridge for dinner, uncork/unscrew and winetaste a small amount of the warm wine and remember. Once you have your chilled wine with dinner, compare the two tastes. The differences can be quite amazing.

2. Buy six bottles or so of your favourite tipple and drink no other wine but these wines with food, without food etc, but pay attention to the wine at all times. When the bottles of wine are finished, purchase a bottle of the same variety of wine but from a different maker and taste. Your palate will haven ‘gotten used to’ the first wine and you will be surprised at the differences you will discover – a great way to educate your palate.

3. Buy three bottles of your favourite wine – same variety, say ’Chardonnay’, but three different brands. Invite a few friends over to winetaste, not quaff (well initially anyway!). Your palate will not become as overburdened or confused as if you were  tasting several varieties of whites and reds. This comparison when tasting one variety of grapes/wine can be most beneficial to your armoury of winetasting skills – lots of fun too!

4. Tasting wine after food should be a much more pleasurable experience if you ‘know’ the wine. Be aware of both the wine and food to gauge if they compliment each other. There are no real hard and fast rules – if it works for you, great! - keep experimenting and the ‘greatness’ will get better and better.

Drinking wine with food should be a rewarding experience. Experimentation is essential. Make you own ‘rules’ to suit your situation. Always enjoy wine in moderation
